Tequila mixed with fresh lime juice and ice, topped with grapefruit juice and a splash or two of soda water — it doesn’t get any simpler than this Mexican sipper. Serve with a lime wedge.
Makes 1 cocktail
¼ of fresh lime
Kosher or sea salt
1½ oz tequila
1 oz rich syrup (see recipe below)
4 oz grapefruit juice
Soda water
Lime wedge, lime wheels or grapefruit wedge, for garnish
Rub lime around outer rim of a highball glass. Dip in salt to rim. Add ice, tequila and rich syrup. Squeeze lime quarter into glass and drop in. Pour in grapefruit juice and top with soda water. Garnish with lime wedge.
Makes 1 cocktail
Rich Syrup
2 cups (500 mL) granulated sugar
1 cup (250 mL) water
Bring water to a boil in a small saucepan. Pour sugar into boiling water, stirring constantly until completely dissolved. Let cool. Store in an airtight container in the fridge for up to 2 weeks.
