Watermelon Shooters
Summer 2009
Fruit soups are easy to make and are usually very popular. Prosecco is sparkling Italian wine. If preferred you can use sparkling water but Prosecco gives a more subtle taste. This serves six but when served in shooter glasses, it makes 12.
Serves 6
2 lbs (1 kg) seedless watermelon, cut into cubes (about 6 cups/1.5 L)
1⁄2 cup (125 mL) Prosecco or more to taste
1 tsp (5 mL) grated ginger
1 tbsp (15 mL) lime juice
1⁄2 tsp (2 mL) grated lime rind
Salt and freshly ground pepper
Garnish
2 tbsp (25 mL) finely chopped jalapeño
2 tbsp (25 mL) chopped Thai basil or mint
1. Place watermelon, Prosecco, ginger, lime juice and rind in a blender and process until it is a liquid. Season with salt and pepper to taste. Chill until ready to serve.
2. Combine jalapeño and Thai basil. Place watermelon mixture in shooter glasses and garnish with jalapeño and basil mixture.
