Grilled Zucchini & Tomatoes
Autumn 2009
This colourful dish is spectacular laid out on a platter and served with the turkey. You can also roast these in the oven at 450°F (230°C) for about 20 minutes or until brown.
Serves 20
10 small zucchini, cut in half lengthwise
10 plum tomatoes, cut in half
½ cup (125 mL) olive oil
2 tsp (10 mL) garlic
¼ cup (50 mL) chopped basil
Salt and freshly ground pepper
1. Place zucchini and tomatoes in a large bowl. Add olive oil, garlic and basil and toss to combine.Season with salt and pepper to taste.
2. Preheat grill to medium-high heat.
3. Place zucchini and tomatoes, cut-side down, on grill. Cook tomatoes for 2 minutes or until marked by grill. Turn over and cook for another 2 to 3 minutes or until soft and lightly charred. Cook zucchini for 2 to 3 minutes or until marked by the grill. Rotate on grill 45 degrees to make cross-hatch grill marks (if desired)and grill another 2 to 3 minutes. Turn over and cook another 1 to 2 minutes or until tender-crisp.
4. Remove tomatoes and zucchini to a platter and drizzle over any remaining seasoned oil from the bowl.
