Poached Shrimp with Spiced Aïoli

With the new respect for brining and smoking meats, charcuterie platters are now a popular appetizer. A new take is a fish charcuterie platter with diff‚erent fish preparations on it, lighter and very tasty, it makes a great first course for people to serve themselves. With these recipes I would also include smoked trout garnished with a few thin apple slices. Set up your charcuterie board and keep refrigerated. When you arrive home, pull it out, add the bread and serve.
Serves 8 as part of a charcuterie platter, 4 if served on its own
POACHED SHRIMP
Use larger shrimp for this. The poaching liquid is spicy to give added taste to the shrimp.
POACHING LIQUID
3 cups (750 mL) water
¼ cup (60 mL) dry white wine
2 tbsp (30 mL) seasoned rice vinegar
½ tsp (2 mL) kosher salt
½ cup (125 mL) chopped onion
2 lime leaves, or 2 tsp (10 mL) grated lime zest
3 stalks coriander
4 star anise
1 tsp (5 mL) dried chili flakes
1 lb (500 g) shrimp, size 15 to 20
1 Bring all the poaching ingredients to a boil in a wide pot over high heat. Reduce heat and simmer for 10 minutes. Ladle out 1 cup (250“ mL) poaching liquid and set aside for Salmon Rillettes recipe, if making.
2 Reduce heat to medium-low. Add shrimp to pot and poach gently for 3 minutes or until pink and slightly curled. Remove pot from heat and let shrimp sit in poaching liquid to continue cooking for 10 more minutes. Strain shrimp, discarding liquid and cool to room temperature. Chill. Serve with Spiced Aïoli (recipe follows).

SPICED AÏOLI
This mayonnaise has the perfect balance of tart and heat. It is excellent with the shrimp. Buy the garlic already roasted if you do not have any.
1 cup (250 mL) mayonnaise
1 tsp (5 mL) grated garlic
2 cloves roasted garlic
1 tsp (5 mL) chili flakes
2 tbsp (30 mL) light soy sauce
2 tsp (10 mL) grated lime rind
2 tbsp (30 mL) chopped cilantro
1 tbsp (15 mL) lime juice
Salt to taste
1 Combine all ingredients in a small bowl, adding more lime juice if needed.
Makes about 1 cup (250 mL)
