Iced Coffee: Ice Filter Method

Here’s a trendy Japanese method based on the theory thatfast cooling of brewed coffee holds in the volatilearomas; it’s quick but produces weakerflavour. Set up a filter-system coffee pot with2 cups (500 mL) ice cubes in the pot. Place theamount of ground coffee you usually use for8 cups (2 L) coffee in the filter-lined top. Heat2 cups (500 mL) water until bubbles format the top. Pour enough water on groundsto saturate. Let sit 1 minute and then pourin remaining hot water. When all ice cubesare melted, leave in the coffee pot or pour intoa pitcher or jar. Stir in either 2 cups (500 mL)milk or water. If you wish to sweeten it, add3 tbsp (45 mL) sugar (or desired amount) dissolvedin ¼ cup (60 mL) boiling water. Useright away or refrigerate for up to 2 days.
Makes 8 drinks
