Crème de menthe is poured in many tropical climates, as it adds a cool, refreshing essence to a variety of cocktails. Combined with coconuts and pineapples, which are bountiful in the islands, this is a true Caribbean treat!

1 oz white rum
1/2 oz White crème de menthe
3 oz Coconut cream
4 oz Pineapple juice
1-1/2 cups ice

1. To a blender add rum, crème de menthe, coconut cream and pineapple juice and 1-1/2 cups of ice.

2. Blend until slushy and pour into a Margarita glass.

3. Garnish with a pineapple slice and a green maraschino cherry dipped in crème de menthe.
