We love roasting nuts of all kinds—they add flavour and texture to everything from salads to soups—but we most enjoy the surprising depth they can add to cocktails. Try experimenting with different flavours—adding some cayenne for kick or cinnamon for more savoury spiciness. We rim the glass with the nuts, which keeps the crunch while enhancing the drinking experience.

Makes 1 drink

½ cup (125 mL) crushed roasted almonds 
1 oz rum,
½ oz Alize liqueur
2 oz pineapple juice 
2 oz passion-fruit juice

1 Crush ½ cup (125 mL) roasted almonds and put onto a plate. Rim a glass with Simple Syrup (recipe follows) and dip into the almonds tocoat the rim.

2 In a cocktail shaker filled with ice, add 1 oz rum, ½ oz Alize liqueur, 2 oz pineapple juice and 2 oz passion-fruit juice. Shake until frothy and strain into the rimmed glass filled with ice. Garnish with a lime wheel.

 

Makes 1 drink

SIMPLE SYRUP
1 Combine equal parts sugar and boiling water. Stir until sugar has dissolved. Store in the fridge until chilled.
