The Riesling 'AF' (arrested fermentation) is fermented with 100% wild yeast. Some of the wine is fermented completely dry, while for the rest, the fermentation is interrupted partway through to preserve some residual sugar. Both parts are blended together and the wine is aged on the lees for 11 months. Zesty, bright and juicy, with citrus, pear and apple, it's a gorgeous Ontario expression.
