Whiskey Mojito

Switch things up with this Irish twist on the classic Mojito, a fresh cocktail with a little extra depth of flavour and a hint of vanilla from the whiskey.
Makes 5 cocktails
5 oz fresh lime juice
5 tbsp superfine sugar
30 fresh mint leaves
7½ oz whiskey
25 oz chilled soda water
5 mint sprigs (for garnish)
Muddle lime juice, sugar, whiskey and mint together in a cocktail shaker until the sugar is fully dissolved. Strain into highball glasses filled with ice. Top each glass with 5 oz of soda water and stir gently. Garnish with a sprig of mint.
