Watermelon Margarita

There’s something about watermelon that just screams summer. Sweet and ripe, with that uniquely juicy flavour, it adds a red tinge and a fruity touch to the classic margarita and looks as good as it tastes.
Makes 1 cocktail
Lime wedge and salt
¼ cup chopped watermelon
1½ oz tequila
1 oz lime juice
1 oz simple syrup (see recipe below)
Watermelon slice, for garnish
Rim a margarita glass with lime wedge, then salt. Gently crush watermelon in a cocktail shaker and fill with ice. Add tequila, lime juice and simple syrup. Shake and strain into prepared glass filled with ice. Garnish with watermelon slice.
Makes 1 cocktail
Simple Syrup
1 cup (250 mL) water
1 cup (250 mL) granulated sugar
Bring water to a boil in a small saucepan. Stir in granulated sugar until dissolved. Let cool completely. If making ahead, store in an airtight container in the fridge for up to 2 weeks.
Makes 1½ cups (325 mL)
