Summer Thyme Collins

To a highball glass filled with ice, add 1½ oz gin, ½ oz simple syrup (recipe follows), ½ oz lemon juice and 3 oz soda water. Stir to mix. Garnish with 3 blackberries and a sprig of lemon thyme.
Makes 1 drink
SIMPLE SYRUP
Combine equal parts sugar and boiling water; stir until sugar has dissolved, chill and store in refrigerator for up to 2 weeks.
