Salted Chocolate, Candy Cane & Nut Bark

Salted Chocolate, Candy Cane & Nut Bark

Holiday 2020

By: Tonia Wilson-Vuksanovic

After all your holiday baking and entertaining, you’re bound to have some of these ingredients about the house. Why not bring them all together in a delicious flavourful bark.

Makes about 2 1/2 cups (625 mL) bark

1 lb (455 g) dark semi-sweet chocolate, coarsely chopped
1/2 cup (125 mL) assorted salted nuts (such as cashews, almonds, peanuts)
1/4 cup (60 mL) candy canes, coarsely crushed
1/4 tsp (2 mL) flaky sea salt

1. Line a baking sheet with foil.

2. Fill a medium saucepan one-quarter full with water, place over medium-low heat and bring to a lively simmer. Melt chocolate in a glass or metal bowl placed on top of pan (ensuring the bowl doesn’t touch the water). Use a rubber spatula to stir until fully melted and smooth.

3. Spread chocolate evenly over the baking sheet, sprinkle evenly with nuts, then candy cane and finish with sea salt. Place in refrigerator and allow to firm.

4. Break into large pieces to serve. Bark can be kept in container at room temperature for a week.
