Rosemary Ice

Herbal ice cubes work very well in savoury drinks or in pitchers of ice water in the summer. Select hearty herbs with firm stalks such as rosemary or thyme that will stand up well to freezing.

Serve with an Aperol Spritz

2 cups (500 mL) purified water
1 bunch fresh rosemary or thyme

1 Place rosemary into ice cube tray. Be generous with the amount of herbs, using the tension of the herb against the tray to keep it in place.

2 Bring 2 cups (500 mL) purified water to a boil. Remove from heat and pour hot water over herbs into tray. Freeze until solid, 4 hours or overnight.

Serve with an Aperol Spritz
