Pumpkin Spice Collins

The classic Collins gets positively autumnal with whisky and pumpkin pie-inspired syrup.
Makes 1 cocktail
1½ oz J.P. Wiser’s Deluxe Whisky
1 oz fresh lemon juice
1 oz pumpkin spice syrup, store-bought or homemade (see recipe below)
4 oz unfiltered apple cider
1 apple slice for garnish
1 pinch pumpkin spice for garnish
Pack a 15 oz Collins glass with ice. Add whisky, lemon juice and syrup. Top with cider. Stir to mix. Dust apple slice with pumpkin spice then use to garnish the cocktail.
Makes 1 cocktail
Homemade Pumpkin Spice Syrup
Add 1 ½ cups lightly packed brown sugar, 1 cup (250 mL) water, ¼ cup (60 mL) pumpkin purée, 1 tsp (5 mL) vanilla extract, 1 tsp (5 mL) freshly grated ginger, 10 whole cloves and 2 cinnamon sticks to a saucepan. Gently warm over low heat for 15 minutes, stirring occasionally, until sugar and purée are fully dissolved. Let cool completely. Strain out solids. Syrup will keep well, covered and refrigerated in a sealed container for up to 2 weeks.
Makes 1 cup (250 mL) for 8 cocktails
