Early Summer 2024
In much of Southern Europe, one of the simple pleasures of summer is an easy mix of sparkling wine blended with lemon sorbet and served up as a cool aperitif cocktail. Inspired by that tradition, this drink is made with pear sorbet and vinho verde (literally, “green wine”), a style of young wine that’s typically lower in alcohol, lightly fizzy and fresh-tasting, commonly made in the wineries of northern Portugal.
Makes 1 drink
4 tbsp (60 mL) pear sorbet
5 oz vinho verde
1 pear wedge for garnish
1. Combine the sorbet and vinho verde in a blender and blend on low for 5 seconds or until it has a smooth, even consistency. Pour into a small ice cream glass and garnish with a wedge of fresh pear.
Makes 1 drink
