Pimm's Cup Pitcher

Makes 8 cocktails
14 cucumber slices (reserve eight slices for garnish)
12 mint sprigs (reserve eight sprigs for garnish)
2 orange wheels, cut in half
2 lemon wheels, cut in half
1½ cup (375 mL) Pimm’s No. 1 Cup
¾ cup (180 mL) Ketel One Botanical Cucumber and Mint
6 tbsp (90 mL) simple syrup
3 oz (90 mL) freshly squeezed lime juice
2 cups (500 mL) soda water
Add Pimm’s, Ketel One Botanical, cucumbers, mint, orange, lemon to a large pitcher with ice. Muddle gently. Add soda. Stir. Chill in fridge for at least 15 minutes. If making ahead, mixture will keep well for several hours. Divide between eight rocks glasses and garnish each with a cucumber slice and a mint spring.
