Peach & Mascarpone Bread Pudding with White Chocolate Ganache

While I’ve never met a bread pudding I didn’t like, this sweet, lightly spiced peach dream has quickly become my go-to delicious, low-effort dessert for long summer weekends at the cottage. Nestled in and around custard-soaked bread, sweetened mascarpone and crisp crumbly topping, and drizzled in a simple white chocolate ganache, ripe summer peaches are the true stars of this sweet treat.
Serves 6 to 8
8 slices (1 inch/2.5 cm thick) egg bread, cubed
4 yellow or white peaches, pitted and quartered
6 large eggs
1 1/2 cups (375 mL) whole or 2% milk
1/2 cup (125 mL) half & half cream
1/2 cup (125 mL) packed brown sugar
2 1/2 tsp (12 mL) vanilla extract, divided
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) freshly grated nutmeg
1/4 tsp (1 mL) kosher salt
3/4 cup (175 mL) mascarpone cheese
2 tbsp (30 mL) sugar
TOPPING
1/2 cup (125 mL) packed brown sugar
1/2 cup (125 mL) all-purpose flour
1/4 cup (60 mL) rolled oats
1/4 tsp (1 mL) cinnamon
1/4 tsp (1 mL) freshly grated nutmeg
1/4 tsp (1 mL) kosher salt
1/4 cup (60 mL) unsalted butter, melted
GANACHE
1/3 cup (80 mL) whipping cream
125 g finely chopped white chocolate
1. Lightly grease an 8-cup (2-L) casserole dish with nonstick cooking spray and scatter in half of cubed bread and half of peaches. Layer remaining bread and peaches on top and set aside.
2. In a large bowl, whisk together eggs, milk, cream, brown sugar, 2 tsp (10 mL) vanilla extract, cinnamon, nutmeg and salt, and pour over bread and peaches. In a small bowl, whisk together mascarpone cheese, sugar and remaining 1/2 tsp (2 mL) vanilla, and dot overtop of bread pudding. Set aside to allow bread to absorb custard for at least 20 minutes or cover and refrigerate overnight.
3. When ready to bake, preheat oven to 350°F (177°C).
4. Prepare topping by combining brown sugar, flour, oats, cinnamon, nutmeg and salt in a small bowl. Mix in melted butter until crumbly, and sprinkle evenly over bread pudding. Bake for 40 to 45 minutes or until golden brown and set in centre. Allow bread pudding to cool slightly while you make white chocolate ganache.
5. For ganache, heat whipping cream over low heat or in microwave until just under a boil. Remove cream from heat, add in white chocolate, and slowly whisk until fully melted and smooth. Serve warm bread pudding with white chocolate ganache on the side for drizzling.
