Palomino
Early Summer 2005
This recipe is one of many original cocktails in A Matter of Taste, the book that Lucy Waverman and I wrote last year. It's a more genteel, “Martini” version of the Paloma, the tequila, lime juice and grapefruit pop drink enjoyed in Guadalajara. I love the smoothness that a briefly aged or “rested” (reposado) tequila such as El Jimador Tequila Reposado Gold lends to the cocktail. You can really taste the earthy, slightly bitter agave flavour of the spirit. Lime lovers can squeeze the wheel and drop it into the drink.
1½ oz Reposado Gold tequila
1 oz freshly squeezed grapefruit juice
1 dash grenadine
Garnish:
Lime wheel
1. In a shaker full of ice, shake tequila and grapefruit juice and strain into a Martini glass. Add grenadine and garnish with a lime wheel.
