Orchid Plum Martini

Vanilla has been called pure, spicy and delicate with a peculiar bouquet, which is quite fitting considering no other plant even comes close to its fragrant aroma. Extract of vanilla is often used in cooking and baking but, for cocktails, nothing beats the true taste of vanilla bean. Make sure to use it sparsely: a small piece of bean packs a huge punch of flavour.
To a cocktail shaker add a ⅓-inch piece of vanilla bean and 1 fresh plum, seeded and chopped, and crush. Fill the shaker with ice and 1½ oz vodka, ½ oz lemon juice and ½ oz simple syrup. Shake sharply and strain into a Martini glass. Garnish with a fresh plum slice.
