London Mojito
Summer 2013
A combination of gin and Pimm’s as the base of this Mojito adds a wonderfully complex finish to the palate. Try it with some fun tea sandwiches filled with cucumber and dill, cheddar and cornichons, or ham and Dijon.
1 oz lemon juice
½ oz simple syrup*
10 mint leaves, torn
1 oz gin
½ oz Pimm’s
Ginger ale
To a highball glass, add 1 oz lemon juice, ½ oz simple syrup* and 10 mint leaves, torn. Muddle (but do not mash). Fill the glass with ice and add 1 oz gin and ½ oz Pimm’s. Add more ice and stir to mix. Top with a splash of ginger ale and garnish with lemon slices and a cucumber spear.
*Simple Syrup: Combine equal parts boiling water and sugar, and stir until sugar is dissolved. Store in refrigerator until chilled.
