The concentrated refrigerated stock in supermarkets is very good. Look for products that have chicken as the first ingredient and do not list MSG. Today there are excellent tetra-packed stocks. However, you should look for a low-salt version if you want to reduce them for sauces. This is an easy recipe to improve concentrated stocks found in supermarkets.

Makes 4 cups (1 L)

5 cups (1.25 L) stock from bouillon cubes or other stock base
2 cups (500 mL) water
1 onion, sliced
1 carrot, sliced
1 stalk celery, chopped

1. Combine stock base, water, onion, carrot and celery in a large pot and bring to a boil on high heat. Reduce the heat to low and simmer for 30 minutes.

Makes 4 cups (1 L)
