Hot Sake Martini
Autumn 2022
A perfect autumn aperitivo! The combination of gin and hot sake gets poured over a wasabi ball, creating a tingling and exhilarating vapour as you sip. Garnished with pickled ginger and crisp nori, it’s a new fall favourite.
Makes 1 drink
1 piece roasted seaweed
1 slice pickled ginger
1 wasabi ball, about 1/2 tsp (2 mL)
1 oz gin, such as Roku Gin (LCBO 636209)
3 oz hot sake, such as Hakutsuru Junmai Sake (LCBO 12849, 720 mL)
1. Create the skewers in advance for quick service. To each cocktail skewer, add a small square of roasted seaweed, rolled or folded. Add a slice of pickled ginger. Form a small ball of wasabi, and place onto the tip of the skewer. (When placed in a Martini glass, the roasted seaweed should not touch the liquid.)
2. To a heatproof martini glass, add 1 oz gin. Heat sake in the microwave (in a microwave-safe glass), or on the stovetop, until almost boiling, then add to martini glass. Add the skewer, and serve immediately.
