Highland Pomme
Holiday 2022
French flavours marry beautifully with the best of Scotland in this gorgeous drink. A 23-year-old single-malt Scotch that has been finished in fine French-oak cuvée wine casks gets kissed with Calvados, the famous apple brandy from Normandy. The result is a rich and smooth sipper with luxurious flavours that continue to meld as the drink rests over ice. It’s as lovely at cocktail hour as it would be after dinner. Makes 1 cocktail
1 oz ultra-aged premium Scotch, such as Glenfiddich Grand Cru
1 oz Calvados
1/4 oz fresh-squeezed lemon juice, strip of lemon peel reserved
Sprig fresh thyme for garnish
1. In a cocktail stirring pitcher or shaker filled with ice, add Scotch, Calvados and lemon juice. Stir at least 30 seconds, until very well chilled. Strain into a rocks glass over a large cube of ice.
2. Squeeze the reserved lemon peel, skin side in, to express some of the lemon oils into the drink. Rub skin side of lemon around rim of glass. Garnish with thyme sprig.

Batch It Up, Highland Pomme
For a pre-made, bottled cocktail, mix 1 1/2 cups (375 mL) ultra-aged premium Scotch, 1 1/2 cups (375 mL) Calvados and 3/4 cup (175 mL) water in a 1-L glass bottle and refrigerate up to 2 weeks.
