Hawaiian Chex Mix

Classic Chex mix takes a trip to Hawaii with rich macadamia nuts, a maple-soy coating and furikake, an umami-rich Japanese seasoning that’s popular in Hawaiian cooking. Mostly used to season rice, furikake consists primarily of nori, sesame seeds and bonito (flaked fish), so it’s not vegetarian-friendly. You can find it at just about every Asian grocery store.
Serves 12
1/2 cup (125 mL) unsalted butter
1/4 cup (60 mL) pure maple syrup
3 tbsp (45 mL) soy sauce
4 cups (1 L) rice Chex cereal
4 cups (1 L) mini pretzel twists
1 cup (250 mL) macadamia nuts
1/4 cup (60 mL) nori furikake
3 tbsp (45 mL) sesame seeds
1. Preheat oven to 250°F (121°C). Line a baking sheet with parchment.
2. Heat butter in a small pot over medium-high, stirring occasionally. When butter starts to bubble up, after about 4 minutes, immediately remove from heat. Carefully stir in maple syrup and soy sauce—it will sputter. Set aside.
3. In a large bowl, stir together Chex, pretzels and nuts. Pour butter mixture overtop and stir to coat evenly. Transfer to prepared baking sheet, spreading into an even layer. Sprinkle with furikake and sesame seeds.
4. Bake, stirring every 15 minutes, until golden brown, about 45 minutes. Cool completely. Serve or transfer to an airtight container and store at room temperature for up to 5 days.
