Hamptons Lemonade

A staple of summer, homemade lemonade is refreshing, tart and light. This modern lemonade uses the exotic flavours of lemon grass and the decadence of sparkling wine to create a sophisticated taste sensation. Make a batch for a perfect patio cocktail to serve guests.

1½ oz citrus vodka
½ oz lemon juice
½ oz Simple Syrup (recipe follows)
1 tsp diced fresh lemon grass 
2 oz pineapple juice
2 to 3 oz sparkling wine or Prosecco

1. In a cocktail shaker filled with ice, add 1½ oz citrus vodka, ½ oz lemon juice, ½ oz Simple Syrup (recipe follows), 1 tsp diced fresh lemon grass and 2 oz pineapple juice.

2. Shake sharply and strain into a highball glass filled with ice. Top with 2 to 3 oz sparkling wine or Prosecco and garnish with a lemon grass stalk.

Simple Syrup
To make Simple Syrup, combine equal parts sugar and boiling water, stir until the sugar has dissolved, and store in the fridge until chilled.
