Crispy Chickpea Party Mix

Cocktail nuts can be pricy, but a flavourful party mix makes for an even better crowd pleaser for any sort of entertaining. This version uses a simple tin of chickpeas that’s crisped up and combined with savoury pretzels, a handful of toasted nuts and a blend of sticky dried fruit for a satisfying sweet and salty snack.
Serves 6
1 can (540 mL) chickpeas, drained and rinsed
1 tbsp (15 mL) olive oil
Salt and freshly ground pepper to taste
1 cup (250 mL) walnut halves and pieces
½ cup (125 mL) blanched almonds
2 cups (500 mL) pretzel sticks
3 tbsp (45 mL) salted butter
2 tbsp (30 mL) coarsely chopped rosemary
1 small clove garlic, finely grated
2 tsp (10 mL) honey
¾ cup (175 mL) dried golden figs, halved lengthwise
½ cup (125 mL) dried apricots, halved
1. Arrange rack in the centre of oven. Preheat to 375°F (191°C).
2. Transfer chickpeas to a baking sheet lined with a paper towel. Thoroughly dry chickpeas and discard paper towel. Drizzle with oil and toss to coat. Season with salt and pepper. Toss again.
3. Roast in the middle rack, shaking pan halfway through, until chickpeas are just crisp, about 20 minutes. Sprinkle walnuts and almonds overtop, shaking pan to distribute nuts evenly. Continue roasting until nuts are very lightly toasted, 5 to 7 minutes. Transfer to a wire rack to cool, 10 minutes. Reduce oven heat to 250°F (121°C).
4. Combine pretzels with chickpea mixture in a large bowl. Set aside. Melt butter with rosemary and garlic in a small saucepan over medium-low heat. Stir in honey to combine, then drizzle over pretzel mixture, gently stirring to coat fully. Lightly season with salt and pepper. Return mixture to baking sheet, shaking pan to distribute ingredients evenly.
5. Bake on middle rack, stirring halfway through, until mixture is toasted and dry, 55 minutes to 1 hour. Transfer to a wire rack. Cool completely, 20 minutes; party mix will crisp up as it cools.
6. Sprinkle figs and apricots over party mix, gently tossing to combine. Serve immediately.
MAKE-AHEAD TIP
Toasted chickpeas and nuts can be made ahead, cooled and stored in an airtight container up to 3 days. Continue with recipe beginning at step 4 before serving.
