Cool Breeze Cocktail
Early Summer 2015
Fill a rocks glass with ice. Add 1½ oz rum, the juice of ⅛ fresh lime (squeeze and drop in), ½ oz Ginger Lemon-Grass Syrup (recipe follows), 3 oz fresh (cloudy) apple juice. Add 1 oz ginger beer (or ginger ale). Garnish with a candied ginger slice.

Makes approx. 1 cup (250 mL)
GINGER LEMON-GRASSSYRUP
To a heatproof container, add 1 cup (250 m) sugar, 1 tbsp (15 mL) ginger juice and 1 stalk fresh lemon grass, chopped. Add 1 cup (250 mL) boiling water and stir to dissolve. Allow to cool. Cover and store. Remove lemon grass after 24 to 48 hours (to taste). Refrigerate for up to 3 weeks.
