Avocado Margarita

It’s not quite guacamole in a glass, but this blended cocktail uses avocado to achieve a creamy texture and slightly vegetal, savoury profile alongside traditional Margarita flavours. While the drink works without the optional addition of melon liqueur, that ingredient not only amps up the green colour but delivers a burst of fruit to balance all the savoury flavours. Rim the glass with salt, or use Tajín (Mexican chili and lime salt, available at Latin groceries) or chili powder for a slightly spicy option.
Makes 1 drink
3/4 cup ice
1 oz blanco tequila
1 oz freshly squeezed lime juice
1/2 oz orange liqueur
1/2 oz melon liqueur (substitute: 1/2 oz Rich Syrup, recipe below)
1/2 avocado, skin and pit removed, cut into large chunks
Pinch cayenne pepper
Pinch salt, plus more if rimming glass with salt
Wedge of lime
Tajín seasoning or chili powder (optional), for rimming glass
Fresh or dried red chili (optional) to garnish
1. In a blender, add ice, tequila, lime juice, orange liqueur, melon liqueur (or syrup), and avocado. Add cayenne and salt, and blend on high speed until mixture is a uniform colour and texture. Taste and add additional cayenne if desired.
2. Squeeze juice of lime wedge into a small saucer or bowl. Dip the edge of a Margarita or coupe glass at an angle into lime juice, then press glass into seasoning of choice. Pour blended mixture into glass and garnish with chili if desired.

Rich Syrup
This classic variation on simple syrup offers concentrated sweetness using a 2:1 ratio over simple syrup's traditional 1:1.
1 cup water
2 cups granulated sugar
Bring water to a boil in a small saucepan. Stir in sugar until dissolved. Remove from heat. Cool completely. If making ahead, syrup will keep well, covered and refrigerated for up to 2 weeks.
