Sparkling Peach Sidecar
An iconic three-ingredient cocktail, the Sidecar delicately balances brandy, orange liqueur and lemon. This fizzy version brightens the drink with sparkling wine but keeps the classic cocktail’s sugar-dusted glass rim. Choose dry Cava or Prosecco to balance the sweet schnapps. For a cocktail with less alcohol, substitute the sparkling wine with sparkling water.

Granulated sugar, for glass rim
¾ oz Peach Schnapps
½ oz orange liqueur
1 oz fresh-squeezed lemon juice
3 oz dry sparkling wine such as Cava or Prosecco or lemon-flavoured sparkling water
3 drops Angostura bitters
Lemon zest or twist, for garnish
1. In a shallow saucer, moisten coupe or flute glass rim in water, then dip in a shallow saucer of sugar to create a glass rim. Refrigerate glassware to chill.
2. To a cocktail shaker full of ice, add Peach Schnapps, orange liqueur and lemon juice. Shake until thoroughly chilled, 15 to 30 seconds.
3. Strain through a fine metal cocktail sieve into chilled coupe or flute glass. Top with sparkling wine or water. Add bitters. Garnish with lemon and serve.
