Pina Colada Seltzer
This fizzy, lighter and less indulgent take on a tropical classic is perfect for those hot days when getting out the blender and opening cans of coconut cream feels like too much work. Cut through the fuss with this satisfying and easy-to-put-together sipper that hits all the right flavour notes and has just a touch of creaminess, thanks to the coconut water.
2 oz coconut water
1½ oz gold, spiced or dark rum or 2 oz flavoured rum
2 oz pineapple juice
2 to 4 oz soda water
Lime wedge and pineapple spear for garnish
Mint or basil sprig for garnish (optional)
Add coconut water, rum and pineapple juice to a rocks glass half-filled with crushed ice or filled with regular ice. Top with soda and stir to mix. Garnish and serve.
