Irish Gold Rush
Created in the early 2000s, the wonderfully balanced bourbon-based Gold Rush became a modern classic for good reason. It’s simple to execute and delicious. It also lends itself easily to minor variations like this version, which uses Irish whiskey instead of bourbon.

Irish Gold Rush recipe by Victoria Walsh
2 oz Irish whiskey
¾ oz lemon juice
¾ oz honey syrup (recipe follows)
Lemon twist for garnish
Piece of honeycomb for garnish (optional)
Add whiskey, lemon juice and honey syrup to a cocktail shaker filled with ice. Shake until well-chilled. Fine-strain into a cocktail or coupe glass. Garnish with a lemon twist and skewer of honeycomb.
Makes 1 cocktail
Honey Syrup
Pour ¼ cup (60 mL) liquid honey and 2 tbsp (30 mL) boiling water into a small bowl or heatproof container. If making ahead, store in a sealed jar in the fridge for up to 2 weeks.
Makes about 1/3 cup (80 mL)
