Dirty Vodka Soda
The sour and salty notes of a Dirty Martini bubble up in this simple but lip-smacking highball. For a lighter drink, use only 1 oz vodka — the sharp and punchy brine flavour means you won’t miss the extra alcohol.

Recipe
Pair it with a crispy snack like our Clam Fritters with Dilly Tartar Sauce.
1 to 1½ oz vodka
½ oz olive or pickle brine, or more to taste
Dillon’s Lemon Bitters (optional)
4 oz chilled soda water
Olives or gherkins for garnish
Sprig fresh thyme, rosemary or dill for garnish (optional)
1. In a highball glass, mix vodka, brine and bitters, if using. Add ice to fill glass. Top with soda water and stir gently. Garnish with pickled treat of choice, and herb, if using.
