Making the iconic whisky cocktail with equal parts sweet and dry vermouth—in place of just sweet vermouth—creates a flawless sipper called a Perfect Manhattan, hence the name of our modern take. For an autumnal twist on this ever-so-slightly drier version of a traditional Manhattan, try making it with mildly peaty blended Scotch and garnishing it with a sprig of thyme.

This drink is delicious, fragrant and bold enough to stand up to richly flavoured desserts like our Chocolate Coffee Pecan Pie.
TIP: If you'd like to make individual servings of this comforting treat, try trimming the pastry to fit individual baking dishes. Continue with the instructions in the recipe dividing the filling between prepared pastry-lined dishes. You may need to reduce the baking time.


2 oz whisky, blended Scotch or rye
½ oz dry vermouth
½ oz sweet vermouth
2 to 3 dashes Angostura bitters
A thyme sprig for garnish
Cocktail cherry for garnish (optional)
Add whisky, vermouth and bitters to mixing glass filled with ice. Stir until well-chilled. Strain into a chilled coupe or cocktail glass. Clap thyme and rub around rim of glass. Use it to spear the cherry before adding both to cocktail.
