Sparkling Mojito

This lively twist on a classic cocktail gives it sparkling new zest.

¾ oz lime juice
1 oz Simple Syrup (recipe below)
Dash Angostura Bitters
6 mint leaves
1½ oz Bacardi 8 year rum
2 oz sparkling wine
Chopped mint
Vanilla bean (optional)

Shake all the ingredients except the sparkling wine, and strain into a chilled Martini glass. Top with sparkling wine, and garnish with floating mint flecks and a vanilla bean (if desired).

Simple Syrup: To make simple syrup, combine equal parts sugar and boiling water, stir until sugar has dissolved, store in refrigerator until chilled.
