Peach Julep

To a chilled rock glass (or silver julep cup) add 2 tsp superfine sugar and ¼ cup fresh peeled peach. Muddle. Add 3 sprigs of mint, torn, and gently press (but don’t crush) the leaves. Fill the glass with shaved or crushed ice and add 2 oz bourbon. Stir to mix, add more ice and garnish with a straw and a mint sprig.
