Watermelon Mojito

For Brock Shepherd, this is the quintessential summer cocktail. To prepare watermelon juice, process peeled watermelon chunks in a home juicer, or blend in a blender, then sieve.

Makes 4 drinks

8 mint sprigs
4 oz (125 mL) amber rum
4 oz (125 mL) fresh lime juice
4 oz (125 mL) watermelon juice (see instructions above)
2 oz (50 mL) *simple syrup (recipe follows)
Eight 2-inch (5-cm) cubes watermelon, frozen

1. Place 1 mint sprig in each of 4 glasses and muddle by crushing the mint against the side of the glass with a wooden spoon.

2. Stir together rum, lime juice, watermelon juice and simple syrup in a large pitcher, then add watermelon cubes and remaining mint sprigs.

3. Pour rum mixture into glasses, dividing evenly. Serve at once.
