Real Kir
Winter 2005
Invented by Canon Felix Kir, a hero of the Resistance and a long-serving post-war mayor of Dijon, Kir combines local Burgundy white wine with Dijon's own blackcurrant liqueur in a drink that packs a real punch. Proper Dijonnaise Kir should contain at least 20 percent cassis-anything less and the residents of Dijon refer to such an aberration as “un Kir blonde.” Use Jaffelin's Bourgogne Aligoté.
Makes 4 drinks
4 oz (125 mL) Crème de Cassis
2 cups (500 mL) chilled Aligoté white wine
1. Pour 1 oz (30 mL) Crème de Cassis into each of 4 wine glasses. Top up with white wine, dividing evenly. Serve at once.
