Minted Iced Tea

Fresh, fragrant mint and zesty lemon elevate this simple mix to big-batch cocktail status. Scotch makes for an unexpected substitute for rum, just be sure to use a non-peaty one.
Makes 4 to 6 servings
4 mint sprigs, plus more for garnish, if you like
8 oz white rum or non-peaty blended Scotch
4 cups (1 L) lemon iced tea, chilled
3 lemon wheels, for garnish
Remove leaves from sprigs and add to a 6 cup (1.5 L) pitcher. Pour in rum. Muddle or gently press with the end of a wooden spoon. Add a handful of ice cubes. Top with iced tea. Add lemon wheels.
