This is fermented in concrete then aged in both concrete and various sizes and ages of oak barrel, including a non-intrusive 10% portion in new oak. It's relatively pale in colour, with beautifully clear and bright aromatics, showing no sign of surmaturité. Rounded and medium-bodied in style, it has piercing acidity and measured, snappy young tannins.
