A classic Jungle Bird is made with a bitter red aperitivo like Campari; experiment by substituting a bittersweet orange aperitivo, such as Martini Fiero, for a slightly sweeter, less bitter flavour. Both add colour and balance to the simplest of tropical drinks.
1½ oz Bacardí Black Rum
¾ oz red bitter aperitivo such as Campari, or substitute Martini Fiero for a sweeter, less bitter taste
1½ oz pineapple juice
½ oz freshly squeezed lime juice
½ oz simple syrup
Pineapple frond or lime wheel, for garnish
Add rum, aperitivo, pineapple and lime juices and syrup to a cocktail shaker with ice. Shake well and strain into a glass with ice, or crushed ice. Garnish with pineapple frond.
