Watermelon Cucumber Refresher

Refreshing cold watermelon, alongside cucumber and a little mint, makes for a gorgeous agua fresca spiked with a little vodka. Best made only a couple of hours in advance; be careful not to process the mint too finely or you’ll end up with a muddy looking cocktail.

Makes 1.5 L, enough for 8 to 10 drinks

¾ cup (175 mL) Simple Syrup (recipe follows)
⅔ cup (150 mL) freshly squeezed lemon juice
1 cup (250 mL) peeled and chopped cucumber
2 cups (500 mL) peeled and chopped seedless watermelon
¼ cup (60 mL) firmly packed mint leaves 
3 cups (750 mL) cold water
Vodka
Agua fresca

1. In a blender, combine ¾ cup (175 mL) Simple Syrup (recipe follows), ⅔ cup (150 mL) freshly squeezed lemon juice, 1 cup (250 mL) peeled and chopped cucumber and 2 cups (500 mL) peeled and chopped seedless watermelon. Process until smooth. Add ¼ cup (60 mL) firmly packed mint leaves and pulse until mint is chopped. Turn out into a large pitcher and stir in 3 cups (750 mL) cold water; chill.

2. When ready to serve, fill tall glasses with ice, add 1 oz vodka to each and top with agua fresca.

Makes 1.5 L, enough for 8 to 10 drinks

Simple Syrup:
Combine equal parts sugar and boiling water. Stir until sugar has dissolved. Store in the refrigerator until chilled.
