In a large pitcher combine 16 oz tequila, 4 cups freshly squeezed lemon juice and 1½ cups Lemon Thyme Syrup (recipe follows). Stir to mix. To serve, divide between 8 glasses filled with ice, and top with soda water. Garnish with a fresh thyme sprig and lemon slice.

Makes 8 drinks

LEMON THYME SYRUP
Combine 2 cups sugar with 2 cups water in a small pot. Add the zest of 2 lemons and 12 thyme sprigs and bring to a boil over high heat, stirring occasionally until sugar is dissolved (about 5 minutes). Remove from heat and let cool at room temperature. Strain mixture into measuring cup, discard thyme sprigs and zest. Cover with plastic wrap and chill in refrigerator until needed.
