Grilled Cheese Curd & Peach Sandwich

Grilling bread brings a whole new dimension to its flavour and texture. This sandwich highlights this and complements it with chewy cheese curds and tender ripe peaches.
Makes 4 sandwiches
1 cup (250 mL) cheddar cheese curds, preferably white
2 tbsp (30 mL) honey
1 tsp (5 mL) finely chopped basil or mint
1 baguette
2 tbsp (30 mL) butter
1 large ripe peach, pitted, finely sliced
1 Preheat barbecue to medium-low, about300°F (150°C).
2 Stir cheese curds with honey and fresh herbs.
3 Slice 8 pieces of baguette on the diagonal into ¾-inch-thick (2-cm) slices, about 4 inches (10 cm) long. Generously butter one side of each piece of bread. Lay slices on a platter, butter-side down. Sprinkle half of the cheese curds mixture onto 4 pieces of bread. Layer peaches over curds, then top with remaining curd mixture. Sandwich with remaining piecesof bread, butter-side up. Gently press down to keep curds and slices in place.
4 Place sandwiches on grill and cook with lid closed for 3 minutes or until curds have begun to melt and bottom pieces of bread show grill marks. Press down gently on sandwich with a spatula, then flip. Close lid and cook for 2 more minutes or until lightly charred and gooey.
