'Oeil de Perdrix' (eye of the partridge) is the traditional name for this wine's colour, which is achieved by lightly pressing whole clusters and then allowing brief interaction with French oak during and after fermentation. The 2018 is lifted and bright, with tangy fruit, a delicate herbal undertone, and a dash of spice on the close. A nice option for grilled seafood appetizers. (Vintages panel, July 2019)
