    'Oloroso' describes Sherries that have developed little or no flor. Flor is the layer of yeast that forms on the top of Sherry while it's in barrel, limiting the interaction of oxygen with the wine and playing a key role in determining the Sherry's style. Oloroso Sherries develop rich toffee, leather and spice notes.
