    Vecchia Grappa di Prosecco is a selection of the finest lots of Glera variety pomace. In 1896 Matteo Da Ponte published 'Il manuale della distillazione', the book which contains illustrations, for the first time, of the alembics he patented and the first columns for concentration of the alcoholic vapours, built to age and soften a genuine spirit yet with a rough and unsophisticated taste. A blend of 8 select aging's from 3 to 50 years, creating a very select aged grappa. Ageing occurs in French Limousin oak, that gives this spirit its gold-yellow hue, which enhances its luminous clarity. A deep, rich bouquet initially releases peppery balsam, which yields to floral notes, raisin, and apricot, enriched by subtle hints of honey.
