    Rosewood makes their 'AF' (arrested fermentation) Riesling by halting fermentation partway through in a portion of the wine - keeping a hint of residual sugar intact - while fermenting the rest completely dry, after which the whole thing is aged on the lees in stainless steel. What results is a wine bursting with juicy pear, apple and grapefruit that pairs well with pork-belly tacos or choucroute garnie.
