    Just over 50% of the Cabernet Franc here was dried and prepared in the appassimento method; the grapes were dried for 125 days. The wine was then aged for 16 months in French oak barrels. You can expect to find rich dark fruit, cassis and herbs. Cellar for 7+ years, or decant for 60-90 minutes and serve tonight with roast lamb or prime rib.
