A super-smooth twist on a Manhattan, this was Aja Sax’s first signature cocktail, born when she was bartender at the Drake hotel. Her creative process? “I imagine the drink then throw it together,” she explains. The smoothness comes from the perfect balance of the Averna and the Aperol.

Stir together 1½ oz Buffalo Trace bourbon, ½ oz Averna, ½ oz Aperol, 3 drops orange bitters and 1 drop Angostura Bitters in a mixing glass over ice. Strain into a coupette glass. Garnish with a cherry.

Makes 1 drink
