The Licorice Twist

Aniseed fans will love this refreshing sweet/sour cocktail.

1 can (530 mL) lychees in syrup
2 cups ice
4 oz Ricard Pastis (LCBO 15693)
Freshly squeezed juice of 3 limes
6 licorice Catherine wheels, 6 licorice allsorts and 6 cocktail sticks

1 Remove 3 large lychees from the can, cut each in half and put half a lychee in each of 6 Martini glasses. Set aside.

2 Pour remaining lychees and their syrup into a blender (not a food processor). Add ice, Ricard and lime juice. Blend until slushy, then divide among Martini glasses.

3 With sharp kitchen scissors, cut a slit in each licorice Catherine wheel and hook 1 over edge of each glass. Thread a licorice allsort onto each cocktail stick and use to garnish drinks.

Makes 6 cocktails
